Lemon & Thyme Roasted Chicken

Ingredients

  • 1 DOUX FITLIFE CHICKEN (1,200 > 1,600 GRS)
  • 4 LARGE POTATOES, CUT INTO THICK SLICES
  • 1 LARGE LEMON, JUICED
  • 1/3 CUP OLIVE OIL
  • 3 STEMS OF FRESH THYME, FINELY CHOPPED
  • 2 TEASPOONS MINCED GARLIC
  • 1 TEASPOON SALT
  • 1/2 TEASPOON BLACK PEPPER

Instructions

  1. Pre-heat oven to 250 degrees Celsius.
  2. To prepare the marinade mix lemon juice, olive oil, fresh thyme, minced garlic, salt and pepper in a small bowl.
  3. Thoroughly wash and pat the chicken dry, season slightly with salt. Place the chicken and potatoes in a large oven pan. Rub the marinade on the chicken and the potatoes.
  4. Place the pan in the oven and roast at 250 degrees for 15 minutes. After 15 minutes reduce the oven temperature to 170 degrees Celsius and leave in the oven for 50 to 60 minutes.
